How to Make Pour Over Coffee with a Chemex

The Chemex is a classic. It brews a clean cup and maintains body and balanced floral notes. Perfect for any filter coffee.

What Do You Need?

900ml Chemex.
Chemex paper filter.
60 grams (about 6 tablespoons) of coffee grounds. Use a filter blend, like our Lion's Mane Blend, for the Chemex.
900ml of hot water around 93°C.
Stirring utensil.
Timer.
Mug or carafe.
Scale (optional but helps with precision).
Note: if you have a smaller (or, larger) Chemex scale appropriately based on a coffee to water ratio of 1:15

STEP #1
Prep & Preheat

Start by heating your water. Bring it to a boil
and then let it cool for about 30 seconds to reach the ideal brewing
temperature of 93°C.

Whilst your water is heating, place a Chemex paper filter in the Chemex
with the folded side against the spout. Rinse the filter with hot water
to remove any paper taste and to preheat the Chemex. Pour out the rinse
water.

After you have placed your filter put the ground coffee
into the centre of the pre-wetted filter. Ensure there is an even
distribution of the grounds across the filter.

Note: ground
coffee should be at a consistency similar to Kosher salt for optimal
extraction. For best results, order our whole bean coffee and grind to
size. If you are unable to do this, order the filter grind.

Bloom & Brew

Pour a small amount of hot water (about twice the weight of your
coffee grounds) onto the coffee in a circular motion. This is called the
"bloom." Stir gently to ensure all the grounds are saturated. Wait for
about 30 seconds.

Gradually pour the remaining hot water over the
coffee grounds, starting at the centre and spiralling outward, making
sure to wet all the grounds evenly.

This pour should take another 2
– 2.5 minutes. Gently stir as needed during this process to ensure all
grounds are fully immersed in water.

Steep & Serve

Allow the coffee to steep and drip through the filter. This should take approximately another 1 – 1.5 minutes.

Once all the liquid has dripped through the filter, carefully remove the filter with the grounds and discard it.

Your freshly brewed Chemex coffee is now ready to be served directly from the Chemex into your mug or carafe.
